Gluten, Dairy and Refined Sugar Free Cacao Fudge No-Bakes

I’m obsessed with no-bake cookies! Anything that eliminates the guessing game of baking is a winner in my book. These are the healthier option to “normal” no-bakes because these cookies are free of gluten, refined sugar and dairy. The perfect combination if you have a diva stomach like myself. Enjoy!

Ingredients
  • 1/2 Cup of Gluten Free Rolled Oats
  • 1/4-1/2 Cup of Flaked Unsweetened Coconut
  • 1/2 Cup of Peanut Butter*
  • 3-4 Tbsp Cacao Powder
  • 1 tsp Maca Powder
  • 1 tsp Vanilla Extract
  • 3 Tbsp Maple Syrup
  • 1/4 Cup Coconut Milk
  • 3-4 Tbsp Coconut Oil
Peanut Butter:
  • 8 Tbsp Peanut Butter Powder
  • 1 Tbsp of Honey
  • 3-5 Tbsp of Water
  • 1-2 Pinches Salt
Instructions
  1. Make 1/2 Cup of Peanut Butter. 

  2. In Sauce Pan add: Cacao, Maca, Coconut Oil, Peanut Butter and heat until coconut oil is liquid.

  3. Remove from heat and add Vanilla Extract, Coconut Flakes, Oats, Salt and Coconut Milk. 

  4. Spoon on parchment paper for quicker clean up. I sprinkle extra salt and then put in fridge to firm up for at least 2 hours. 

Recipe Notes

If you have peanut butter on hand, then no need to make from scratch. I bought Peanut Butter Powder because there weren't any nut butters on sale and this was the cheaper option. 

Since I made my own peanut butter, I added honey to it. Therefore, if you use peanut butter without added sugar, then you will probably want to increase your Maple Syrup amount.
