Maca Blueberry & Lemon Donuts

It’s fun to indulge! But what if we could indulge while also nourishing our bodies?! As a kid, donuts were my absolute favorite treat and I would get my favorite donut every birthday. Now as an adult, I can replace my angel cream filled long john donut obsession with these healthy but delicious Maca, Blueberry and Lemon Donuts! 

No Donut pan? No worries and use a muffin pan instead! Works great either way.

Ingredients
Dry Ingredients
  • 1 Cup GF 1-1 Flour
  • 1/2 Cup Coconut Flour
  • 1/2 Cup Tapioca Flour
  • 1/2 tsp Baking Soda
  • 1 Zest of a Lemon
  • 1 pinch Salt
  • 1 Tbsp Maca Powder
Wet Ingredients
  • 3 Eggs
  • 1/3 Cup Coconut Nectar
  • 1 Container Unsweetened Applesauce (approx. 1/2 cup)
  • 1/2 Lemon (juice)
  • 1 tsp Vanilla Extract
  • 1 Cup Blueberries
Lemon Glaze
  • 1 Juice Lemon
  • 1 Zest Lemon
  • 1/3 Cup Tapioca Flour
  • 1-2 Tbsp Honey or Coconut Nectar
Instructions
  1. Mix the wet and dry ingredients separately. 

  2. Preheat oven to 325 degrees. 

  3. Once you mix wet and dry together, fold in blueberries. 

  4. Make sure donut pan is greased with oil (I use coconut or grapeseed oil). Then pour in mixture to the top of each donut ring. Press down to ensure every space is filled with dough. 

  5. Bake for 14-16 minutes. 

  6. Let cool completely before removing from donut pan. Then turn over and let it sit on a wire wrack to ensure bottom is cooled and set too. 

  7. Mix the glaze and dip top of donut into the glaze. Then let that cool and harden for about 20 minutes. 

  8. Best 1-2 days after baking. If you can't eat them in time, then place in fridge for 4-6 days!
