This is my favorite go-to meal when I’m feeling something greasy without the guilt! No need to cancel work after eating these Gluten and Dairy free pockets- you’re welcome Jim Gaffigan!
Health Benefit:
- This isn’t the healthiest food but it sure beats the original! I stopped counting the ingredient list of a regular hot pocket at 20 ingredients. This hot pocket contains 4 ingredients.
- Daiya Cheese: Contains no animal products or soy, casein, lactose, whey, wheat, barley, gluten or nuts.

Ingredients
Hot Pocket
- 2 White Corn Tortillas
- Sprinkle Daiya Pepper Jack Cheese
- 4 Pepperoni
- 1 Handful of spinach
Side
- 1 spoonful Hummus
- 1 spoonful Salsa
Instructions

Heat stove top to medium heat.

Sprinkle cheese on one side of each tortilla. Top with 2 large Pepperoni and then sprinkle more cheese. A little cheese goes a long way.

Turn on Netflix or Hulu while it’s grilling (Perhaps Jim Gaffigan Comedy Special?)

Turn over and repeat to other side then open a cold, gluten free beer and enjoy! I always pair mine with hummus but salsa is great too! A cilantro hummus is shown in picture.
