Growing up, my mom would always make us Cabbage and Noodles and we loved it! This is a healthier version with Purple Cabbage and Red Lentil Noodles.

Cabbage & Red Lentil Noodles

Ingredients
- 2 Tbsp Olive Oil
- 1/2 Cabbage
- 1 Small Onion
- 1 Tbsp Garlic (from jar)
- 1 Bunch Lacinato Kale
- 2 Tbsp Apple Cider Vinegar
- 1/2 Box Red Lentil Pasta
Instructions

Heat pan on Medium Heat with Olive Oil, Onion and Garlic.

Add Thinly Sliced Cabbage to the pan.

Boil water and then add Noodles.

After 15 minutes of sauteing Cabbage, then add Diced Kale. Add more Salt and Pepper.

Once Noodles are finished and drained, add noodles to pan.

Finish with "Everything but the Bagel" Trader Joes Seasoning. I always add Siracha and/or hummus in my individual bowl.
