Hosting Book Club meant I could test out a new recipe! Insert these Chai, Maca Cookies that are both delicious and healthy. First taste tester was my brother and he approved but he is open minded to my healthy baking. Therefore, my bigger challenge would be convincing my other friends cookies can still be satisfying free of gluten, dairy and refined sugar. My friend pictured below was skeptical at first but soon became a huge fan and was caught on camera enjoying several more post book club!
Chai Fun Facts:
- May help boost heart health, reduce blood sugar levels, aid digestion and help with weight loss.
- 1 Cup Blanched Almond Flour
- 1/2 Cup Coconut Flour
- 1/2 Cup Coconut Sugar
- 1 Tbsp Maca Powder
- 1 Tbsp Cinnamon
- 1/2 tsp Ginger
- 1/2 tsp Cardamom
- 1/2 tsp Pumpkin Pie Spice
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Cream of Tarter
- 1/4 tsp Salt
- 1/2 Cup Coconut Oil (melted)
- 2 Eggs

Mix all dry ingredients together. All can go into one measuring cup. Easy and dish washing friendly 🙂

Incorporate eggs and coconut oil together. Then add it to the dry ingredients.

Roll out into balls and sprinkle additional Cinnamon, Coconut Sugar and Salt before baking.

Bake @ 350 degrees for 12 minutes
