Golden Turmeric Vegan Cookies: Gluten Free & Dairy Free

My friend was back in our hometown due to the Pandemic and we were going to have a “social distancing walk” to catch up. Since she lives in a different country, I rarely get to celebrate her birthday (if ever)! Therefore, this was my opportunity to make her something special for her day. However, with limited trips to the grocery store, I utilized what I had and crossed my fingers and toes this would work out! With lots of wishful thinking and good vibes, this “on the whim” recipe turned out delicious!

Ingredients
Dry Ingredients
  • 1/4 Cup Almond Flour
  • 1/4 Cup Tapioca Flour
  • 1/4 Cup Cassava Flour
  • 3 Tbsp Golden Turmeric Tea Spice (pre-mixed) Numi Brand
  • 1 Tbsp Ceylon Cinnamon
  • 1/2 tsp Ground Ginger
  • 1 tsp Baking Soda
  • 1 Pinch Salt
Wet Ingredients
  • 3 Tbsp Melted Coconut Oil
  • 2 Chia Seed Eggs
  • 2 Tbsp Almond Butter
  • 1/2 Cup Coconut Sugar
  • 1 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
Instructions
  1. Start by Pre-heating oven to 350 degrees.

  2. Make your Chia Seed Egg. Add 6 tablespoons of warm to hot water and two tablespoons of chia seeds. Stir and let sit until ready to combine wet ingredients.

  3. Melt the coconut oil and set aside to cool down.

  4. Mix all the dry ingredients together.

  5. Now start combining the wet ingredients with the sugar and the coconut oil first. I used a hand mixer for about 1 to 2 minutes.

  6. Add the remainder of the wet and mix together with hand mixer.

  7. Gradually add the dry ingredients with mixer or by spoon.

  8. With spoon or cookie scoop, place on parchment paper and sprinkle with more salt before baking them for about 12 to 14 minutes. I had to do mine in two batches. Makes 18 cookies.

Turmeric Chai Golden Latte Tea: Ingredients are organic turmeric, organic cinnamon, organic ginger, organic cardamom, organic nutmeg, organic licorice root, organic black pepper. 

If you do not have an already mixed blend, feel free to add your own spices. I happened to already have this tea and it was going to expire so I wanted to make sure nothing went to waste.
