My friend just started a local Homeless Period Project Chapter and has been so gracious with hiring me to bake some sweet treats for the project. I made these Cacao Banana Brownies and Maca Chocolate Chips Cookies for the latest event. Instead of following someone else’s recipe, I wanted to try my own. After a long day of work and one night to complete the task, I held my breathe and hoped for the best. To my amazement, they both turned out! Added bonus: these brownies have ingredients to support Women’s Health!
Health Benefits:
- Peanuts are a great source of cancer-fighting choline. Some studies have found consuming peanuts (a.k.a choline rich foods) can help reduce risk of Breast Cancer.
- Vitamin D from Eggs is a great source and especially important when pregnant.
- Bananas are high in potassium and low in sodium which can help lower blood pressure and protect against heart attack and stroke. Plus potassium is good to fight cramps!
- 2/3 Cup Blanched Almond flour
- 1/3 Cup Peanut Butter Powder
- 2/3 Cup Coconut Sugar
- 2-3 Tbsp Cacao Powder
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 2 Medium Bananas (mashed)
- 2 Eggs
- 1/2 Cup Cacao Chocolate Chips Enjoy Life Brand
- 3 Tbsp Coconut Oil (melted)
- 1 tsp Vanilla Extract
- 1/4 Cup Cacao Chocolate Chips or 100% Cacao Chocolate Bar
-
Melt Coconut Oil and 1/2 Cup of Cacao Chocolate Chips in microwave or stove top. Then let cool for a minute and set aside.
-
Mash 2 Bananas.
-
Add all wet ingredients together: Coconut Oil/Choc. Chips Melted, Eggs, Mashed Bananas, Vanilla Extract
-
Mix all dry ingredients together: Almond Flour, Peanut Butter Powder, Coconut Sugar, Cacao Powder, Baking Powder and Salt.
-
Mix wet and dry and then add the additional 1/4 Cup of Chocolate Chips.
-
Line 9X9 or 8X8 baking pan with parchment paper for a quick clean up.
-
Bake @ 350 degrees for 20-25 minutes.
-
I then transferred bite sized pieces in baking cups for the Homeless Period Project Event. Pairing the two desserts looked so cute together!
If you want it completely free of refined sugar, than use 100% Cacao bar for the chocolate chips.
I’ve added free samples to my craft fairs and it’s been a hit! This picture is the latest craft fair before the brownie bites were going, going and gone! 🙂
